CANCELLED The Nitty Gritty: Using field corn to make hominy, grits, masa and more!

Are you wondering, “What’s Hominy?” Have you used masa harina at home but didn’t know you could make it yourself? Or maybe you’re thinking, “Masa what?” Then attend this class and get ready to open up a whole new world of food. Corn can be used for a lot more than roasting or cornbread and this class will get you familiar with the nitty gritty details.

During this class you will learn to grind and sift your corn to get the product you want; how to make and use lye water for making hominy (a more nutritious version of corn); how to store the hominy you’ve made for future use; how to make masa harina – the backbone of so many foods south of the border; how to make the fermented corn drink Chicha; how to make parched corn for snacking; and how to use corn husks and corn cobs for cooking. This is a hands on class, so you’ll get to try a variety of new skills and techniques. Participants will get to take the fruits of their labor home as well as a container of hominy.

Guests are invited to join us for a farm fresh lunch after the class.

*Workshops will be filmed for our local Citizens TV program, and participants will be asked to
fill our a photo release form. However, we will respect the privacy of those who do not wish to
be filmed during the day.
